I feel like there are just a couple things that will make this truly competetive.
-I think Coating Energy and Metal Saucer decrease consistency as you are trying to attack with Mew the whole time. Because if there are four Mews, I got to be missing something if I'm wrong here.
-Fezandipiti is enough, if you just play a Dene or Bat.
-Lastly, I think Psychic's Third Eye is not the correct draw engine for this. You have Brandon and Colress, Morty's Conviction and many more.
By the way, if Reset Stamp isn't banned (which I'm not sure about) this is cooked.

Regarding the criticisms you have, thee are methods to the madness. Coating should probably be a one-of in this list, not a two of, and fill the other spot with a Dedenne or Squawk. The other thing about Coating is that unlike Shiled Energy (or any of the other XY special energies for that matter), allows you to attach it to a Pokémon with a different type to what it provides. This means that this deck effectively uses it as an extra basic metal energy to attach to Mew, with the added benefit of being searchable through G&H. Saucer is also only there as a last resort if you can't get Mew going and need to attack with Perserrker in a single turn.
Crobat is absolutely useless here, because drawing until you have six cards in your hand in a deck that tries to get as many cards in its hand as possible doesn't work. At least Dedenne can discard your hand, allowing for you to recover stuff like Grants and Eggs after, boosting the effective card count you have.
The same could be said for Colress, even if it can get you a ton of extra cards at its maximum potential. And Brandon... really? Those two don't work especially because they rely on your opponent to cooperate with their board state, and a competent opponent would just play conservatively and stunt on your possible hand size. Third eye is the best for what this deck aims to accomplish because unlike the others, it allows you to keep what's already in your hand, letting you grow your hand exponentially, instead of getting an explosive start only for it to lag behind once you need the bigger numbers. It also works the best on the first turn, while your opponent is usually still setting up their bench. And while you technically can get a setup where you Colress when all of your recovery cards are in the discard pile, it's a lot more finicky than it really needs to be. Plus, Third Eye's bonus of letting you look at your opponent's hand can help you determine how you want to forward your plays later on. Seeing what you opponent has is not something to be underestimated!
And lastly, this deck uses both Fez and Oricorio because like I stated about the other draw support Pokémon, it doesn't have a cap to your hand size. Drawing 6 after a KO single-handedly brings you back into the game if your opponent Iono's you to 3 cards or something (assuming you don't have Milotic out yet, which is an inevitability for some games). Additionally, Mew, the "main" attacker of this deck, only has 50 HP. So that means that it will be KO'd A LOT. It also creates an awkward situation for your opponent. Do they KO Mew and give your opponent 6 new cards, or leave it alone while they threaten another huge swing?
And yes, Reset Stamp is banned. The only card that specifically hard-counters this is Hand Trimmer, which currently has a staggering 0% usage in the Expanded Meta! Either way, I'll make a couple tweaks to the list here, but this is my interpretation of why this deck is built the way it is.
